Hash Brown Casserole

I love hash brown casserole, but wanted something that was a little healthier and still tasted fantastic! This fits the bill! If you love potatoes and creamy, cheesy goodness, you are going to love this recipe!

1 Bell Pepper (color of choice)

1/2 onion

1 cup spinach

4 cups hash browns

2 eggs

3/4 cup Greek yogurt

1 teaspoon salt

1 teaspoon Dijon mustard

1/2 teaspoon pepper

2 cups cheddar cheese





Preheat the oven to 350 degrees. Spray a 9x13 pan or use parchment paper. Dice the pepper and onion. Chop the spinach. Put in half the hash browns. Mix the eggs, egg whites, yogurt, and mustard. Pour the mixture on top of the hash browns. Add 1.5 cups of the cheeseMix everything until well combined then add the rest of the Hashbrowns and

mix those in carefully. Top with remaining cheese and bake for 40-50 minutes. Check frequently toward the end of cooking time. You want the eggs to be fully set and all liquid to be evaporated. Cut into 10 pieces. This warms up really well in an air fryer, but a microwave will work just as well!
